No, I am sure Albanians have many unique ways of cooking their foods. The foods are similar but their is variety across balkan culture.

So pig is not an Albanian traditional dish??? I always thought you guys weren't religious ya know? I always see Albanians loading into the Chinese food buffet during daylight hours by my house eating pork spare ribs and pork fried rice.

Well, it is mainly pork that should be cooked well done. The rest of the meats are horrible this way, like a brick. Are you sure you don't eat pork?

Gjize in english is "Cottage Cheese" I think... Should be able to find it in the US, we have it here in OZ.... my mother always makes Lakeror me Gjize, tip-add just a little riccotta--

Eeh you can't beat a good Lakeror, is that pumkin dish called 'Kapama' not sure about fasulnik wasn't home for dinner...
had 'gjelle me kompira' with a 'kulace' of home made buke yesterday... also our bace is full of fresh domate and piperka (speca) at the momemt...

yeah I've tried "cottage cheese" , but nothing close to the gjiz as i know it. The real gjiz should have crumbles of cheese inside too. cottage cheese is to smooth and sweet compare to gjiz.

Most Albanians who I hang out with in the US eat whatever looks good, however, we dont have pig in our culture (since it was adopted from Muslim Ottoman culture) so we tend not to be exposed to it. My dad comes a Bektashi Muslim family and my house is filled with salami. On more than one occasion I when a family member or friend comes from Tirana and tries something at a local deli I have to have to remind the person that this particular thing is pork, only to be met by a shrug.
I was not old enough to experience this since I started school in the post-commi days, but I remember hearing that during the commi days pork was given to children in schools specifically during Bayram... I've never asked my parents this, but if it is true, I think that this should be brought back. ;D

I went in school in Albania, at both commie and past commie days. Who was giving to the children pork? How? In commie schools and in post commie schools and in todays Albania schools food or cafeteria didn't and doesn't exist. The only school with cafeteria was in Tirane and it was only one. That was the school for "kids with slow development" No food was ever offered or served from Albanian schools. Also in Albanian family pork or no pork was not a discussion unless a family was crypto-religious which anyway was a very rare thing. Pig was and it's today 4rth choice after the calf, sheep and goat excluding poultry and fish. The reason has nothing to do with religion more then with herding tradition. A village would hire 3-4 shepherds, give to them all sheep's or goats they head. Shepherds then would take that flock for months in hills, valleys, mountains following greener pastures and ungrazed grass. This flocks could be in hundred or thousands. After a period of time they would return back to the village with double the number maybe. In the villages a house would keep 10 sheep or goats and 2-3 cows and a bull for everyday needs of milk, butter and cheese. Meet was secured from increase on number of the of sheep's every spring. On the other hand pig cant' be herded through valleys and hills for months on end and be brought back doubled in numbers a same as sheep and goat. Pig needs a base a house when you can close it by night. Min while it doesn't produce nothing till time comes to slauter him. But since the large flocks of sheep provided the meet, wool and the small number keept in house the everyday dairy products, pig wasn't feasible to care for all it offered was only meet. In areas of Lac, Lezh, Mat, where no extra large flock of sheep could be kept and where snow during winter makes moving sheep through region for pastures is impossible pig was cultivated. They would keep a pig or two, feed him or set it free during the day and by the time winter would knock at the door turn the pig into dry smoked meet and consume during the snow months. Also religion has a bit to do with it, but was never a determining factor. Again that is a general attitude and reasons. exper9iences of a particular individual or family wasnt the rule. the comon incidence in albania is that Weconsume pork in (berxolle, sallami, pasterma, prosciutto, baked, fried, grilled) without thinking anything about it
again as a rule not as an exception
