After all... we must not forget the Greek church played a stupid role and almost imposed to all Greeks to change their names from "pagan" ones like Aristoteles, Socrates etc to Othodox ones.
I believe that was a bad moment for the Greek church.
I dont know about the etymology of the names... but I can share with you the following.

Last names with 2 Syllables:
Macedonians and Epirots
Examples: Zotis,Siskos,Tsais,Pappas,Tolios etc
Last names ending with -akis:
Cretans
Examples: Mathioudakis,Politakis, Daskalakis, Sartzetakis etc
Last names ending with -idis and -adis :
Pontians and Asia Minor
Examples: Lazaridis, Stefanidis, Melekidis, Anthoulidis etc
Last names ending with -oglou :
Asia Minor,Anatolia generally, Eastern Thrace
Examples: Kougioumotzoglou, Adamoglou, Pazaroglou
Last names ending with -opoulos :
Peloponeseans
Examples: Papadopoulos, Akrivopoulos, Kalopoulos, Georgopoulos etc
Last names ending with -ou (and having a first name as mark):
Cypriots
Examples: Georgiou, Vasileiou, Xristou, Athanasiou etc
Last names with variety but always 3 Syllables :
Vlachs
Examples: Akritas, Kourbetis, Paneas, Holevas etc
Hatzi- at the beggining of the last name declares his ancestors visited Jerousalem.
All of Greeks
Examples: Hatzifotiou, Hatziakritas, Hatziadamoglou etc
Islanders share all of the above.
