Is it possible for a person of the same stock to lose their pigmenation by living in a different climate? For example would a man living in the mountains where it is colder and much higher above sea level become blond and acquire a lighter complexion? While the man living near the sea side would have brunet hair and a darker complexion? How long would this take? Would they be considered the same stock?

From what I understand it takes give or take several thousand years for a genetic mutation (which might or might not be beneficial) to occur therefore if there is a given population that moved from one environment to another it is natural to expect that such population will 'adjust' itself accordingly to the new environment if the conditions remains and they they persisted with stating within the new area over say several thousand years.
Would they still be the same well you be the judge with following example, people who live across western Europe are genetically closely related while appearing pretty different (Compare a Spaniard and a Swede). Now are Spaniard (western Mediterranean type) and an average Swede (Hallstatt Nordic, which is really de-pigmented Mediterranean) one and a same, I would say not as they diverged into two different types (although of same common distant origin as far back as several thousand years ago).
French and Dutch colonists within South African Republic (whose ancestors settled there 300-400 years ago) are already looking more Mediterranean rather then Nordic do to the local climate that is closest to Mediterranean in nature and same is bound to happen in places like Australia which are too hot for Nordic type to remain as is for a longer period of time (Albanized types do not thrive in sub-tropical areas).
